Cauliflower doesn’t have to be boring!
Many of my patients are on a grain free diet. The reasons range from IBS to Colitis to Eczema and more. For some of these people, it means a drastic change, often giving up their favorite foods. Rice is a staple for many people. I recommend experimenting with cauliflower as an alternative! You are replacing the empty calories of rice with a nutrient dense vegetable, and we all know getting enough vegetables in a day is a challenge.
I first started experimenting with cauliflower rice after reading Well Fed by The Clothes Make the Girl and Against All Grain.
I recommend playing with it, and finding that perfect combination of flavors that suit your tastes.
Ingredients
1 head of cauliflower
2 Tbsps coconut oil
1 minced garlic clove
salt and pepper
Directions
Cut the cauliflower into small pieces and pulse in the food processor until the pieces are rice-sized.
In a sauce pan (please no teflon), cook the garlic in the oil for a few minutes. Add the caulflower and saute until tender. Add salt and pepper to taste – then serve! For added anti-inflammatory benefits, I will often add onions and tumeric.
