This is by far one of our most requested recipes.  I first heard about it on Robb Wolf‘s podcast.  Feel free to tweak and play with it – and let us know your favourite version!  Enjoy this sugar-free, dairy-free, and gluten-free treat!

Coconut Apple Pudding

1 can full fat coconut milk – (BPA free can preferred)
2-3 apples – 3 small apples or 2 larger ones – peeled and chopped
1-4 Tbsp coconut oil – this is used to thicken the mixture so play with amount depending on your desired consistency.
1/2 tsp to 2 tsp Cinnamon – again the amount is up to you.

Bring the coconut milk and chopped apples to a boil.  Once the apples are soft, put the mixture and the coconut oil and cinnamon into the blender.  Blend until smooth.  Pour into small containers and place in the fridge.  As the mixture cools, the consistency will be like pudding or yogurt.  This usually takes 12-24 hours.
